Fit Chic Pumpkin Crumb Cake

Ingredients:
1 1/3 cups light palm sugar

1 cup Almond  flour

1 scoop of whey protein powder

starch 1/4 cup coconut flour

1 1/2 teaspoons baking powder

1 teaspoon  baking soda

1 teaspoon fine sea salt

1 teaspoon  cinnamon

1/2 teaspoon ground nutmeg

1 cup pumpkin puree

3 large organic  free-range eggs, beaten

1/2 cup organic coconut oil

1 tablespoon vanilla extract

For streusel topping:
1/3 cup organic sugar

3 tablespoons almond flour

3 tablespoons  organic coconut oil

2-3 tablespoons chopped walnuts or pecans (may omit)

1 teaspoon ground cinnamon

1/4 cup of honey

1 teaspoon of pumpkin spice

Instructions:
Preheat the oven to 350ºF. Line a 9-inch  deep cake pan or baking dish with a piece of parchment paper.
In a large  mixing bowl, whisk to combine the dry ingredients: sugar, almond flour, baking  powder, baking soda, whey protein powder, sea salt, cinnamon, pumpkin spice, and nutmeg.
Add in  the pumpkin, beaten eggs, coconut oil, vanilla extract. Beat to combine.

Scoop the batter into the prepared  cake pan and smooth it out to the edges. Use wet hands if you need to.

Make the streusel topping, combining the sugar, flour, coconut oil, honey, chopped walnuts or pecans (if using), and cinnamon. Mix  until sandy.
Spread the streusel topping on the cake. Lightly press down  to even it out.

Bake in the center of a preheated oven for 40 minutes,  then loosely tent a piece of foil over the top to prevent the streusel from  browning too much. Bake for another 10 to 15 minutes until the center of the  cake is firm and a wooden pick inserted into the center emerges clean.
Cool the coffee cake on a wire rack.

Fit Chic Pineapple Meatballs

I am always looking for new fun ways to keep my meals new, fun, and different.

I had some focused time this weekend to create and here is one that I came up with!

Ingredients:

2 lb. ground grassfed beef or ground pork

1 cup of almond flour

1 cup of diced pineapple

1 egg whisked

1/2 tsp of ginger

1/2 onion chopped

2 cloves of garlic

2 Tbsp of Coconut oil

3 Tablespoons of full fat coconut milk (or unsweetened vanilla almond milk)

1 cup of Thai Peanut Sauce

1/2 cup of Barbeque Sauce

Directions: 

Pre-heat oven to 400 degrees.

In a large bowl combine beef, egg, onion, garlic, ginger, milk, almond flour.

Form the meatballs with your hands, roughly 2 to 3 tbsp. per meatball and place them on a lined baking sheet with parchment paper.

Place in oven and cook for 15 to 20 minutes.

In a large skillet place pineapple, coconut oil, thai peanut sauce, BBQ sauce for about 2 – 4 minutes then add the meatballs and continue cooking over low to medium heat for 10 minutes; stirring frequently.

Remove from heat and serve with cauliflower rice or

Mashed Sweet Potatoes:

Ingredients
4 sweet potatoes
1 cup full fat canned coconut milk
1 teaspoon of ginger
3 TBSP of grass-fed butter or ghee
1/2 ripe banana mashed
1 tsp of cinnamon
 
Directions: 
  1. Bake the sweet potatoes at 350F (usually for over an hour). Make sure they are very tender
  2. Peel Sweet Potatoes
  3. Place the peeled sweet potatoes into a large bowl add coconut milk, ginger, banana,cinnamon, and grass-fed butter. Mix until ingredients are creamy. Pour meatballs over the sweet potatoes.

Sausage and Squash Egg Bake …

This is a quick and easy breakfast treat that tastes great day off and even better left over!

Ingredients: 

4-5 chicken apple sausage links

1 cup diced butternut squash,

1 cup diced potatoes

8-10 eggs

2 TBSP of coconut creamer (or full fat coconut milk)

1/2 cup of diced onion and peppers

3-4 Tbsp fresh cilantro, minced

1 cup of spinach

1/2 tsp of thyme

2 cloves of garlic

dash of pepper

Directions: 

Grease an 8×8″ baking dish or deep pie dish with a tablespoon of melted coconut oil or grass-fed butter (ghee).
Add sausage, onion/pepper, potatoes, squash, and spinach to the bottom of the dish.
In a medium bowl, whisk 8 together eggs with garlic, thyme, pepper, and cilantro.
Pour egg mixture over the eggs.
Bake at 375 degrees for 20-25 minutes, or until lightly browned and cooked through. You might have to take it out at 18 minutes and cut through the middle to help cook better.

Fit Chic Pumpkin Pecan Casserole …

We are currently doing a nutrition challenge at our gym CPMFITness and we are all “hungry” for a good comforting food that will taste delicious but still keep us on track with our health and fitness goals! Here is one that compliments both, and is delicious with eggs and bacon. Hope you enjoy it as much as our family did!
Ingredients:
1 can of full fat coconut milk
1  cup chopped pecans
2 very ripe bananas mashed
3 tbsp almond butter
3 tablespoons of coconut flour
3 eggs (whisked)
1 tsp of cinnamon
1 tsp of  Pumpkin Pie
1/4 tsp of nutmeg
15 oz can pumpkin puree
1/2 of unsweetened coconut flakes
Directions::
Preheat over to 350 degrees. Grease a 13×9 baking dish (with coconut oil)
In a medium mixing bowl pour in pumpkin, mashed bananas, coconut milk, mashed bananas, cinnamon, nutmeg, pumpkin spice, coconut flour, eggs (whisked first), and almond butter. With a big spoon whip vigorously until completely blended. Once combined, sprinkle the top with nuts and coconut flakes and place in the oven for 25 – 30 minutes. Remove from oven and serve.

Happiness is all in how we view it, I can look in the mirror everyday and a beautiful women who loves herself, and loves the person she is inside ..

I can see myself as a millionaire and focus on my goals, focus on being kind to my body, and love myself and those around me choosing to make the most out of every situation.
Or I can choose to focus on all the things I am not doing, I don’t have, etc .. But what kind of life is that to live?

Fit Chic Delicious Detox Salad ..

Here is a wonderful salad that will taste great and make you feel great all in one. This is the perfect “detox” food that has natural ingredients that are cleansing to the body. This is definitely one you will want to keep in your recipe books. the Dressing is delicious and tastes great on all types of salads too!

Ingredients

For the dressing:

1/3 cup avocado oil

1/2 cup lemon juice, fresh

1 tablespoon fresh ginger, peeled and grated

1 teaspoon of Dijon mustard

1 teaspoon of raw honey

1-2 cloves of garlic

For the salad:

2 cups of raw kale (steamed)

2 cups sliced red cabbage

2 cups steamed broccoli florets

1 cup of grated carrots

1/2 cup of sliced red pepper

2 avocados diced

1 teaspoon of cilantro

1 cup raw cashews

i cup of raw diced asparagus

1 cup of diced hard boiled eggs 

Directions

  1. Whisk together all ingredients for the dressing (or put everything in a small blender and blend) and set aside until ready to use.
  2. Throw kale in a small Tupperware and microwave on high for 1 minute. Then make sure to steam the broccoli
  3. Add the kale, cabbage, steamed broccoli, red pepper, asparagus, and carrots to a large serving bowl.
  4. Pour desired amount of dressing over the salad and toss until everything is coated.
  5. Add the parsley, diced avocado, eggs, and cashews, and toss again.Then Top with cilantro.
