You all know how I LOVE making Sunday Breakfast. My creativity is at a all time high, and I am on a mission to come up with new innovative recipes!
So here is one I would love to share with you …
Sweet Potato Hash With Eggs Over Easy and Hollandaise Sauce
Lets start with the Sweet Potato Hash …
8 sausage links thawed and cut into 1 inch pieces
2 Sweet potatoes diced (put in the microwave for 5 minutes to soften or bake for 25 -30 minutes at 350)
1 cup of green onion diced
1/2 cup of red pepper
1 tsp of cumin
1 – 2 tsp of creole seasoning
2 tablespoons of olive oil
Directions:
In a large skillet put in olive oil and let heat slightly. Next add sweet potato, green onion, sausage, pepper, and seasonings.
Saute for 10 – 15 minutes on medium – high heat … until potatoes are slightly browned, sausage is cooked through, and onions and peppers are soft.
Eggs:
In the same skillet place eggs and cook over easy or fry them.
Hollandaise Sauce:
Ingredients:
1/2 ripe avocado
2 egg yolks
1 tablespoon of lemon juice
1/4 tsp of salt
1/8 cup of water
6 tablespoons of grass-fed butter (melted)
dash of cayenne pepper
Directions:
In a food processor or blender combine all ingredients. Blend on High for 1 minute or until ingredients are completely blended and it creates a “sauce” like consistency.
Place sweet potato hash on a large plate.
Top with the eggs
Then pour over hollandaise sauce to your liking.
