With the warm days here to stay for the next few months this is a refreshing delicious side dish, main course, or appetizer you will love.
Ingredients:
1/4 cup chopped onion
2 limes, juiced
1 tbsp olive oil
1 lb jumbo cooked, peeled shrimp, chopped*
1 medium tomato, diced
1 medium to large avocado, diced
1/4 cup of red pepper diced
1 tbsp chopped cilantro
2 cloves of garlic
Directions:
In a small bowl combine onion, lime juice, olive oil, tomato, and garlic. Stir and let it marinate for about 10 minutes.
Next add red pepper, cooked shrimp, avocado, and cilantro. Toss so that all ingredients are completely engulfed in each other.
You can serve in small dishes, or place on top of cucumber or sweet potato chips.
