I made this Saturday when I was in a time crunch and new my husband wanted something to go with his eggs.
So within minutes I came up with this Gem of a treat. It is a perfect for that comfort food we oh so crave anytime of the day!
Ingredients:
- 1/4 cup almond flour
- 2 TBSP of coconut flour (you can always use all almond flour or 1/2 scoop of whey protein)
- 2 tablespoons palm sugar
- 1/4 teaspoon baking soda
- 1/4 cup coconut creamer (or full fat coconut milk you can also use almond milk)
- 2 tablespoons of grass-fed butter (or coconut oil)
- 1/2 teaspoon pure vanilla extract
- 1/4 cup of frozen blueberries
- 1 tablespoon of unsweetened shredded coconut
- 1/2 tsp of cinnamon
Directions:
In mug (mine was about 14 ounces) combine flours, sugar, baking soda, cinnamon, and coconut.
Next add coconut creamer, butter, vanilla and mix until smooth. Last fold in blueberries until evenly distributed.
Place in the microwave for about 90 seconds. Make sure it dosen’t over flow in the mug.
Allow to cool about 5 minutes and then devour!
