This is a quick and easy breakfast treat that tastes great day off and even better left over!
Ingredients:
4-5 chicken apple sausage links
1 cup diced butternut squash,
1 cup diced potatoes
8-10 eggs
2 TBSP of coconut creamer (or full fat coconut milk)
1/2 cup of diced onion and peppers
3-4 Tbsp fresh cilantro, minced
1 cup of spinach
1/2 tsp of thyme
2 cloves of garlic
dash of pepper
Directions:
Grease an 8×8″ baking dish or deep pie dish with a tablespoon of melted coconut oil or grass-fed butter (ghee).
Add sausage, onion/pepper, potatoes, squash, and spinach to the bottom of the dish.
In a medium bowl, whisk 8 together eggs with garlic, thyme, pepper, and cilantro.
Pour egg mixture over the eggs.
Bake at 375 degrees for 20-25 minutes, or until lightly browned and cooked through. You might have to take it out at 18 minutes and cut through the middle to help cook better.
