This is a healthy and delicious recipe. It is light with a lot of flavor and is easy to make too !
Ingredients:
4 (6 ounce) cod fillets
1 cup almond flour
1/3 cup grated Parmesan cheese
1 egg whisked
1 tablespoon of coconut oil
1/4 teaspoon ground black pepper
2 -3 cloves of garlic
1 lemon cut into 4 wedges
Directions:
Place almond flour in a shallow bowl.
Add the Parmesan cheese to a shallow bowl, and mix in the ground black pepper and garlic.
Place the egg in another shallow bowl and lightly beat it.
One at a time, dip each fillet into the egg mixture, and let the excess drip off back into the bowl. Then press each fillet into the Parmesan cheese flour mix and coat both sides with it.
Heat a large skillet with coconut oil over medium to medium high heat.
Place tilapia fillets in the skillet and fry each side 3-5 minutes. Or until the fish flakes easily, and the tops are lightly golden.
Top with lemon
