This is the perfect recipe for Breakfast, Lunch, and Dinner!


2 large sweet potatoes mashed and skin removed

1 tbs coconut oil

10 eggs

1 small onion diced

1 green pepper diced

1 red pepper diced

2 cloves of garlic

1 can of diced tomatoes

1 tablespoon of ghee or grass-fed butter

1 tsp of cilantro

1 cup of full fat canned coconut milk

1 cup of steamed broccoli

1 cup of diced Brussel sprouts

1 6 ounce can of diced green chili’s

1 avocado diced

8 pieces of bacon diced


Preheat Oven to 400 degrees. In a mixing bowl combine warm mashed sweet potato and coconut oil. Place in the bottom of a 9 inch round pan.  Place in the oven for 10 -15 minutes until lightly brown and a little crisp.

In a medium skillet place ghee or butter bacon, garlic, and vegetables until bacon is cooked and vegetables are soft.

Pour veggies into bowl and top with eggs, coconut milk, and avocado.and whisk until ingredients are completely mixed.

Pour egg mixture over sweet potato crust and Bake at 350 for 25 – 30 minutes … Until eggs are lightly brown on top and the sides.
