We are currently doing a nutrition challenge at our gym CPMFITness and we are all “hungry” for a good comforting food that will taste delicious but still keep us on track with our health and fitness goals! Here is one that compliments both, and is delicious with eggs and bacon. Hope you enjoy it as much as our family did!
Ingredients:
1 can of full fat coconut milk
1 cup chopped pecans
2 very ripe bananas mashed
3 tbsp almond butter
3 tablespoons of coconut flour
3 eggs (whisked)
1 tsp of cinnamon
1 tsp of Pumpkin Pie
1/4 tsp of nutmeg
15 oz can pumpkin puree
1/2 of unsweetened coconut flakes
Directions::
Preheat over to 350 degrees. Grease a 13×9 baking dish (with coconut oil)
In a medium mixing bowl pour in pumpkin, mashed bananas, coconut milk, mashed bananas, cinnamon, nutmeg, pumpkin spice, coconut flour, eggs (whisked first), and almond butter. With a big spoon whip vigorously until completely blended. Once combined, sprinkle the top with nuts and coconut flakes and place in the oven for 25 – 30 minutes. Remove from oven and serve.
