It is pumpkin season and yesterday I posted about ways to have fun with your health and nutrition. Here is the recipe I promised you! I hope you have as much fun with it as we did!
Ingredients:
1 cup of unsweetened vanilla almond milk
1/2 cup of coconut vanilla creamer
1 cup pumpkin puree
1 egg
2 tablespoons coconut oil
1/2 scoop of chocolate whey protein powder
1 1/2 cups almond flour
1/2 cup coconut flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon of pumpkin spice
1 teaspoon of vanilla
unsweetened shredded coconut
candied pecans (optional)
2-3 tablespoons of grass-fed butter
Directions:
- In a bowl, mix together the milk,creamer, pumpkin, egg, and oil. Combine the flours, palm sugar, baking powder, protein powder, pumpkin spice, cinnamon, and vanilla and mix with a mixer on low to medium until ingredients are mixed throughout.
- Heat a lightly buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
- Top with unsweetened coconut and pecans.
- Add Grade B Maple Syrup on top
