I am always looking for quick, easy, and delicious lunch recipes. It is hard to find some good grab and go foods so here is a great recipe to fit all of those needs. You can make a big batch just stick it in one or two big romaine lettuce leaves and you will have the perfect “unwhich”.
Ingredients:
2 boneless skinless chicken breast cooked and diced
1 avocado (diced)
1 cup of diced grapes
3/4 cup of diced celery
1 cup of chopped pecans
1/2 cup of Paleo Mayo
2 Tablespoons of Dijon mustard
1 Tablespoon of raw honey
1 teaspoon of apple cider vinegar
1/4 cup of diced red onion
dash of pepper
Directions:
In a large bowl throw chicken, diced onion, celery, and grapes and mix. Then toss in the honey mustard, mayo, apple vinegar, pepper, and honey. Stir vigorously until all ingredients are mixed evenly. Last place avocado and pecans and mix.
Place on Romaine Lettuce Leaves and serve.
