I made this for date night last night and my husband was he was in heaven. It was really easy and had such wonderful flavor. It also tasted wonderful the next day for lunch.
Ingredients
1 -2 lbs boneless skinless chicken breast, chopped into pieces
2 tablespoons coconut oil melted
1 package of frozen cauliflower or 1/2 head of cauliflower
1 can of peas
1 cup green onions, chopped
1/2 cup half a yellow onion, diced
1 teaspoon ginger paste
2 cloves of garlic, grated or finely minced
1 16 ounce can full fat coconut milk
1 tablespoon of curry
3 teaspoons of cashew butter ( you can use almond butter too)
red pepper flakes for garnish if you like it spicy
