This morning I was talking to a client about quick go to crockpot meals that are delicious and really healthy too. So I started to look back at old recipes I had made and dug up this one! It is an oldy but goodie!
Ingredients:
6 frozen skinless boneless chicken breast
1 teaspoon oregano
1 tablespoon dried basil
2 -3 cloves garlic, minced
1 large onion, chopped
2 14 oz. can italian stewed tomatoes (don’t drain)
2 cups of free-range chicken broth
1 jar of your favorite tomato sauce ( I love Raos)
1/4 cup of pesto
3 tablespoons olive oil
2 tablespoons grass-fed butter
1 tablespoon fresh thyme, minced
2 roma tomatoes diced
2 tablespoons dried basil
salt & pepper to taste
2/3 cup grass-fed creamer or coconut creamer
Directions:
Put all the above ingredients into the crock-pot, cook 8 hours on low. Before serving shred the chicken with a large fork. Serve.
You can pour soup into ziploc containers and freeze too. It will stay fresh for a long time in the freezer.
