These are really easy and fantastic grab and go snacks! We can put them in kids lunches, have them in the fridge or freezer for on hand “I need to put something in my mouth immediately before I faint” cases.
Ingredients
1/2 cup pumpkin puree
1/2 cup raw almond butter
1/4 cup maple syrup
1 teaspoon pumpkin pie spice
1 scoop of vanilla or chocolate whey protein powder
1/3 cup sunflower seeds or pepitas
1/3 cup dates chopped and pits removed or 1/4 cup of date paste
2 tablespoons chia seeds (optional)
1 teaspoon of cinnamon
1 splash of vanilla
Directions:
Combine the pumpkin puree, almond butter, maple syrup, cinnamon, vanilla and pumpkin pie spice in a large bowl and stir until smooth.
Fold in the protein powder, sunflower seeds or pepitas, dates, and chia seeds.
Cover the bowl with plastic wrap and refrigerate for an hour. Roll the mixture into balls and top with unsweetened shredded coconut.
Store the balls in the refrigerator or freeze and thaw for a few minutes before eating.
