I love pumpkin and I especially love pumpkin bread with my morning cup of java!
Here is a great recipe that is delicious and nutritious.
Ingredients:
1 cup almond flour
3 tablespoons of coconut flour
2 scoops vanilla whey protein powder
1 tsp baking powder
2 tbsp raw honey
4 tsp. cinnamon (divided)
2 eggs
1 teaspoon nutmeg
1/2 teaspoon pumpkin spice
1 cup unsweetened almond milk
1/2 c. pumpkin puree
1/3 cup of palm sugar
Directions:
Preheat oven to 350.
Lightly grease your pan with coconut oil spray ( I used a 8×8 pan)
In a large mixing bowl, whisk together flours, baking powder, 2 tsp cinnamon, nutmeg, pumpkin spice, and protein powder.
In a medium bowl, whisk together eggs, almond milk, honey, and pumpkin.
In a small bowl mix the palm sugar and remaining cinnamon.
Pour a shallow layer of batter into the loaf pan (about 1/4 of the batter). Sprinkle heavily with half of the cinnamon/sugar mixture. Repeat with remaining batter & cinnamon/sugar on top.
Bake for 25 to 30 minutes or until a toothpick comes out clean when you poke the center of bread.
