Sunday is my day of creation in the kitchen. So this Sunday I stayed true to form and created my version of an Egg McMuffin.
The recipe was really easy and tastes phenomenal!
Ingredients:
1 large sweet potato sliced into rounds
4 pieces of bacon sliced in half
3 eggs scrambled
1 cup of spinach
1 tablespoon of coconut oil
1/4 cup onions
1 clove of garlic
1 teaspoon of cinnamon
olive oil to taste
honey to taste ( I used about a tablespoon)
1/2 teaspoon of salt
Directions:
Pre-heat oven to 400 degrees. Slice the sweet potatoes into 1-2 inch rounds and then lie them out on a baking sheet lined with foil. Top with olive oil to taste and then sprinkle salt, cinnamon, and lightly drizzle honey over the top of them. Place them in the oven for 18-22 minutes or until lightly browned on top and cooked throughout.
In a medium skillet melt the coconut oil and then place the bacon in the skillet and sauté until bacon is cooked. Remove bacon and place on a paper towel to remove excess grease.
Keeping the same greased pan throw in the onion, eggs, garlic, and spinach and sauté until eggs are scrambled and cooked through.
Take the sweet potato rounds out of the oven and place one round on the bottom of the a plate and top with egg mix and 2 slices of bacon per muffin. Next place a round on top of the bacon. Continue to do this with all the rounds ( I made 4 mc muffins with them).
