Ingredients
In a medium pan add coconut oil over medium heat. Add bacon, sausage, onion, and garlc and break sausage apart as it cooks. Once sausage is browned and onion is translucent pour into a large pot with bacon. (My husband loves the grease for flavor but you can always drain it before you pour into large pot).
While bacon mixture is cooking place sweet potatoes in the microwave puncture two to three holes in them with a fork and microwave for 6 minutes. They should be soft but not cooked completely. Then cube them.
After combining bacon and sausage mixture into the large bowl stir in broth, sweet potatoes, salt and pepper.
Stir in broth and potatoes, sun-dried tomatoes, season with 3/4 teaspoon salt and 1/4 teaspoon pepper, kale and coconut creamer. Bring to a simmer and continue to cook for 20-30 minutes. The longer you simmer the better the taste!
*optional top with parmesan cheese to taste.
