I had a friend email me last week, saying he was craving a chocolate chip cookie dough brownie with cookie dough frosting. I emailed him back “done and done”! So I went to the drawing board and created this delicious treat…..
Cook with Caution … You won’t be able to eat just one!
Ingredients:
For the brownie batter:
2 tsp of vanilla
1 stick unsalted grass-fed butter, at room temperature
1 cup palm sugar
2 large eggs
2 2/3 cups almond flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
½ cup almond milk vanilla unsweetened
1 cup dark cacao chocolate chips
For the filling:
¼ cup of unsweetened coconut
¼ of coconut creamer
2 tbsp. unsalted butter, at room temperature
1 scoop of vanilla or chocolate whey protein
¾ cup of almond flour
2 tablespoons of honey
½ tsp. vanilla extract
¼ cup dark chocolate chips
¼ cup of coconut or coconut flour
¼ to ½ of coconut creamer
2 tbsp. unsalted butter, at room temperature
1 scoop of vanilla or chocolate whey protein
¾ cup of almond flour
For the frosting:
Directions:
To make the cookie dough filling, combine the butter, protein, and coconut in a mixing bowl and cream on medium-high speed until light and fluffy. Beat in coconut creamer, honey, and vanilla until incorporated and smooth. Beat in the flour and stir until all ingredients are combined. Stir in the chocolate chips.
To make the brownies, preheat the oven to 350° F. grease an 9×9 pan. In another large bowl combine the butter and palm sugar. Beat together on medium-high speed until light and fluffy. Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
Combine the flour, baking powder, baking soda, and salt in a medium bowl. Stir together to blend. Add the dry ingredients to the mixer bowl on low speed, alternating with the milk, beginning and ending with the dry ingredients, mixing each addition just until incorporated. Blend in the vanilla.
Line half the batter onto the bottom of the baking pan. With a rubber scraper spread all of the filling ingredients over the top of the batter. Last place the remaining half of the batter ingredients on top of the filling and place it in the oven.
Bake at 350 for 20-25 minutes or until slightly brown on top.
Let cool for at least ten minutes and then top with the yummy frosting.
To make the frosting,
Combine chocolate, honey and coconut oil into a microwave safe bowl. Heat in 30-second intervals until the chocolate is melted. Add in sunbutter and vanilla. Using a hand mixer or whisk, mix all ingredients together until smooth. After brownies are completely cooled, frost in a circular motion.
For an added bonus top with the remaining dark chocolate chips!
