St Patty’s Day is best known for their green eggs and ham and corn beef and cabbage. Last St Patrick’s day I gave you all a delicious recipe for Corn Beef and Cabbage, so I thought Green Eggs was the best recipe to follow suit.
I hope this makes your St Patty’s Day extra festive and delicious.
Ingredients:
1 Tablespoon of Coconut Oil
1/2 cup steamed Kale
1/4 cup smoked ham, diced
1/4 cup of red onion diced
6 eggs whisked
1/8 cup of sun-dried tomato
1/2 avocado diced
Salt and freshly cracked black pepper to taste
4 drops of green food coloring
1/4 to 1/2 cup of diced ham
Directions
Heat the coconut oil in a skillet over medium-high heat. Add the kale, onion, ham, and sun-dried tomato to the skillet, stirring until onions are slightly browned.
Next, pour the eggs over the kale mixture. Allow the eggs to begin to set, and then add avocado, salt, and pepper. Stir together until eggs are cooked evenly.
Last top with food coloring droplets, and serve.
