Due to large amount of people requesting this recipe …. here it is! It is one of my most popular and favorite recipes! I hope all you fit ones enjoy it as much as my clients.
Ingredients:
1-2 large sweet potatoes sliced into inch rounds
4 tablespoons of olive or coconut oil – divided
3 cloves of garlic – divided
1 tsp of chili powder
1 tablespoon of creole
1 onion diced
6 oz can of diced green chilies
1 red pepper
1 yellow pepper
1 green pepper
1/2 to 1 cup of pico de gallo
2 lbs of ground beef/turkey
1 6 0z can of diced olives
*optional jalapeno for taste….
Directions:
Heat Oven to 400 degrees.
In a large Ziploc baggie place sliced sweet potato and 1/2 diced onion. Then add the oil, creole, and 2 cloves of garlic. Shake baggie till the potatoes are completely drudged in the oil and seasonings. Then lay the potatoes out on the baking sheet and place in the oven for 18-23 minutes or until potatoes are slightly browned.
In a large skillet place the oil, meat, onion, meat, and peppers cook on med-high until meat is cooked throughout. Next, add green chilies, garlic, chili powder, salsa, and jalapeno. Let meat simmer on low for 8-10 minutes.
Remove sweet potato rounds from the oven and place on a large serving plate and top with skillet mixture. Last place a guacamole spread over the top of the meat and top with olives.
