Here is an amazing recipe that my husband, sister (who is 9), and clients love!
It tastes amazing and you don’t have to feel guilty for eating it.
Ingredients:
2 c Almond flour
2 eggs beaten
1/4 cup unsweetened vanilla almond milk
1/4 cup coconut vanilla creamer ( its soylicious and I get mine at whole foods)
1 tablespoon of shredded coconut
1 tablespoon of honey
1 teaspoon of vanilla
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of cinnamon
1 scoop of vanilla or chocolate whey protein
Directions:
Whisk your eggs in a medium-large sized bowl.
Add your coconut milk, almond milk and whisk together with eggs.
Next add your almond flour and whey protein mix together.
Then add your shredded coconut, salt, baking soda and mix together.
Last, add in your honey, vanilla,and cinnamon. Mix together thoroughly.
Pour into your waffle iron and cooking until cooked through.
Ingredients for Strawberry Coconut Syrup:
1/2 cup light coconut milk
1 cup sliced strawberries
1 teaspoon of palm sugar
Heat a non-stick skillet heat the coconut milk, palm sugar, and strawberries on low heat – simmer for 10 minutes, or until the coconut milk thickens.
