This is a delicious recipe that is very kid friendly as well. It is great on salads, or served in romaine lettuce cups.
I put this in my 8 year sisters lunch a lot and she loves it!
Dried Cranberry Apple Tuna Salad
Ingredients
2 cans of White Albacore Tuna in Water
1/3 cup Dried unsweetened Cranberries
1/3 cup chopped gala apples
1 Tbsp. lemon juice
1 Tbsp. minced fresh garlic
1 Tbsp dill
1/2 cup Olive Oil Mayonnaise
Romaine
Lettuce leaves (optional)
Directions
In a medium size mixing bowl, add your chopped apples and mix with lemon juice so
they don’t brown. Then add cranberries garlic, and dill.
Next, drain your tuna and put into a small bowl. Mash up with a fork so it is
easier to mix with apples and cranberries without mashing them. Then add to
your fruit mix. Finally, add the mayonnaise and mix gently with a spoon.
If you would like a wrap, place the tuna in a lettuce leave wrap and serve.
